You'd need to route a hole for the pickup and a cavity for the wire. Maybe add another volume knob or a pickup selector. Wouldnt be hard for one of the resident Luthiers, but would have to question why you'd bother.
On my Jazz I only ever run a single pickup at a time, usually the neck one, and thats chunky enough for me. Waste your coin on better pickups rather than more pickups. Or a better bass.

I've had a few different combinations. Currently running two monstrously awesome MEC humbuckers in mine, but they have options for coil switching/phase and active/passive, so pretty versatile.
My old bass (which Brent from HANGMAN has) was a Jazz with two Bartolini passive pickups. That still has an amazing sound.
