Always go from light to dark. You can't go the other way...
Happy to talk you through it but start of with a test piece, preferably same kind of wood. I suppose the latter will be impossible but use a test piece with similar colouring.

Lick, not eat. Mind you, i used Briwax oil on top of the colouring for finish. Not safe to lick nor eat
