Agree with simplicity - sufficient simplicity for the sound you want in the environment you aim to play in.

For evolving tweakable sounds in a synth played live I'd be looking at an additive with lots of knobs and a good keyboardist.

For an "in principal" example, here is one patch on a Kawai K5000S tweaked over 10 minutes for harmonic, tonal and percussive effect:



A single good player can take care of evolving percussion, bass and harmonic interplay with your guitars.

Here's a couple more refined demos of two songs we are working on at the moment. I have also potentially found a bass player who we're gonna jam with next week, should help round out the sound a bit and make some of the transitions a bit easier (lot of tap dancing between sections atm)
