This has undoubtedly been done before, but what's the best/easiest/cheapest way to amplify an acoustic?

Easiest and cheapest, CD just showed you.

Best way... is a matter of opinion. But if 'best' isn't secret code for 'cheapest/easiest', the cheap part starts to wilt away pretty quickly.

Active soundhole pickups, undersaddle piezo, underbridge sensors, contact pickups, condesoer mics and combinations of each fit more in the best category than the cheapest category. In other words, $200-$1000.

I've got 3 acoustics that have been electrified with various stages of "cheapness". You definitely get what you pay for. You're welcome to come and try them out at some stage.

I recently got a Fisherman pick-up, $125. Hasn't had a heck of a lot of use yet, but so far been quite impressed with it.

Buy a nice Takamine with pickup installed. 3 band eq etc. Can't go wrong. Yamaha and Maton also have nice electro Acoustics.

I've found an sm57 to be great if you're sitting down with an acoustic

As soon as you get into acoustic guitar pickups you seem to get what you pay for, I've heard some awful sounding spanky acoustic pickups that have no depth at all

Those last two options are probably the best choices for me. Still have a strange resistance to cutting holes in my acoustics.

Eeep! That was supposed to be 'Fishman', not 'Fisherman'.
No volume or EQ, straight plug and play. But picks up very nicely and no interference. Sounds good.
