I do both depending on the band or gig. Kemper direct is marvelous with IEMs and I don't have ringing ears after. Amp and cab for the punk band I'm in because, ya know, punk! Nothing beats that sound on stage but I still have a good time with the kemper

As much as I like JBs answer, I'll give you the proper one.
They've digitally recreated tonestacks and circuits for a heap of amps so that when you adjust the gain, B M T etc on a profile, it reacts realistically to how an amp actually would. Or something like that
