Listen to a track called The Jig. No idea what album it's from, but there's some ripping counterpoint gypsy acoustic shit in there. Pretty easy on the ear, yet awesome at the same time.

Two acoustic guitars; one on each side? Very classical-sounding (because it's actually a classical piece: the Gigue from the English Suite No. 2 in A minor by J.S. Bach)? That would indeed be Mr Gilbert. I don't know of a Satriani song called The Jig - but I don't have all his stuff, so I'm not saying it couldn't be a piece on one of the couple of albums I don't have.

Really enjoyed the Joe Satriani interview by Rick Beato, he just lets Satch talk away and there's some fun stuff in there.

Yeah good interview that one. Satch seems like a really cool super humble dude. I've been watching a lot of Beato's videos, learning a lot. The man really knows his stuff. Don't like that Rhett guy he sometimes collabs with though.

I like Satch, family can't stand it thou and always ask me wtf. However, I listen to it while working as I can't listen to music with lyrics as I get sidetracked and or start typing what they are singing. I find his music more catchy or memorable than John Petrucci etc, even though I enjoy listening to them also for their instrumental stuff
No one ever died of hard work.. but why take the risk..
