LOTS! They're all so different! They look different, they sound different, they feel different, they make you play different! Soon I will have 3 electrics plus my acoustic, and plans for at least 1-2 more after that... pending my pedal/amp building addictions fund draining problems
Some days one, some days several.
But the ones I need today might not be the ones I needed yesterday; or need tomorrow.
So I'll always need more.
Beyond a critical point within a finite space, freedom diminishes as numbers increase. This is as true of humans as it is of gas molecules in a sealed flask. The human question is not how many can possibly survive within the system, but what kind of existence is possible for those who so survive.
I need all the ones I like and don't have.. and even some I don't like that I don't have.

I can get by with the one electric and one acoustic that I have (not counting the strat that doesn't get played, it needs work to be worth playing).
But how many do I want? That's the real question. The answer is lots, because I'm a completist. I like to own sets of things, like books and movies. I'd therefore like a LP, strat, superstrat, hollowbody, V, tele, several other variations of pointy and so on...

I've got 25(ish) guitars and I can easily think of 25 more that i'd like, then 25 more variations of those and then 25 more in different colours. It never ends and there's nothing wrong with that. Guitars are so awesome they can just hang on a wall and still make you happy!

2 electrics and an acoustic would do just fine in terms of need. Would probably want more like 6 electrics and two acoustics, and could probably find a use for around 10 electrics and 3 or 4 acoustics.... But that's without getting into colours.

This is the correct answer.
Other guys have garages full of expensive cars or motorbikes that they seldom drive. But they look pretty, hold their value, and on the occasion are available to drive when such a desire arises.
I teach guitar. It's how I make money so I don't mind owning a few more than I would If I had a non-music related job. I had 20 at one stage but have since downsized immensely. I do find though that I just sell a few and put the money into something else like an amp or repairs etc..
