Has anyone here used 30mm MDF for a cab before or warns against it?

Assuming you have a forklift to transport it around, it'll be fine.

Expect it to be very heavy and to sound kinda bland. Great for reference speakers, but it's dead and stiff and doesn;t impart any 'character' like thinner birch/poplar/pine panels do.
