How do you know which speaker to get and which is better?

Your amp will be the deciding factor, power output and it's impedance options for the output.

8 is default for individual speakers. I have a few 1x12 cabs loaded with 16ohm because I like to pair up different combinations. Two 16 ohm cabs combined will show your amp an 8 ohm load.

Both my main amps have impedance selectors so it's easy to dial in. If you're lucky enough to have a genuine vintage Fender amp, just plug in whatever you want. They'll take a 100% mis-match and not notice at all. Leo saw no reason to make it complicated.

I used to have a THD Flexi 50 which offered impedance mis-matching as a tone shaper. There was a difference but I can't remember enough to describe it now.
