Can you split it both ways?

ie have 3 settings for one pickup?

Yes, in fact you can have four or more settings if you want to do the multi-mini-switch dance.

You can have:
Both coils in series as a humbucker
Both coils in parallel as a humbucker
Just the blade coil
Just the P90 coil

You could also have both coils out of phase with each other, but that would be of little use to most people.

Most players would run with a single miniswitch doing Blade/HB/P90
Or with a push-pull, P90/HB

Hurdy Gurdy.... some how... and I'm not entirely certain how mind you, an instrument that sounds like someone has shoved a nest of angry hornets into a goose with a kazoo bill and is randomly slapping the poor creature with an accordion.... Sounds amazing.
