Oh yarrr, totally not expecting it to sound exactly like a strat, I just associate them with a clean single coilesque sound I have hardly ever played any single coils so don't really know what to expect

Some humbuckers sound great when tapped. One of the things I really like about having the option is that it's a bit like having a clean/dirty switch on the guitar. I reckon it's definitely worth trying.
I used to have a Dimarzio Paf Pro that sounded great coil tapped. Not like a Strat mind you (it was in the neck position of a cheap Epi LP) but still very nice.
Something I quite like is actually switching the humbucker coils from series to parallel on my guitar... Gives a single coil sound but still retains the character of the pickup somewhat. Nothing wrong with taps tho, just sounds different... particularly nice on the neck pup

Yes. I have a HSH five position set up with front H, split front/S, S, split rear/S, rear H. I use the positions as much for tone as for extra distortion/boost. Very handy!
