I am going to take out the EMG's (same may so "NOOOOOO" others will say "I told ya so") and put in some of the Lace Bill Kelliher Dissonant Aggressors Humbuckers that I have in my other custom shop jobby I am trying to sell......

I am after some high quality pots that enable me to do the coil splitting/ tapping or whatever you call it? I love this option in the one I am selling.
Any ideas? Don't mind paying the pingas for the good stuff.

If money's no concern check out Bourns pots. Best pots ever IMO, although some people don't like the low mechanical resistance of them.

You'll need push pull pots for the switching, www.tonelounge.co.nz doesn't have those, and guitarparts.co.nz was out of stock last time I looked, but the rockshop has dimarzio ones

A Les Paul Custom will most likely require long-shaft pots as opposed to standard. If you want coil split/series/parallel options then long shaft push/pull pots are a must.

I could offer you a proto ObsidianWire board with coil splitting. It is an arse to install so I wont be releasing it any tine soon but should suit you nicely if you dont mind a bit work getting it in there.
